Valentina Passalacqua

Viticulture practices have ancient roots in the Gargano and we strive to continue with as little intervention as possible. Their vineyards are mostly located on stony and dry calcareous soil. It was constantly kissed in the sun and beaten by the salty winds of the Mediterranean.

This terroir favors strong and resilient vines, able to maximize their resources and accumulate nutrients. We grow grapes such as Nero di Troia, Bombino, Negroamaro, Fiano, Primitivo and Falanghina, because they are indigenous. Their vines are able to transfer energy and aromas to the grapes, without gaining too much sugar, they retain acidity and a strong minerality, which is found in the glass. They grow with the organic method and we vinify with the natural method, without clarification or filtering.
